I love soup season, it’s so great that you can buy a soup mix from your local supermarket and jazz it up with so many delicious winter flavours. This is the perfect Meat-Free Monday meal ❤
INGREDIENTS
650g Minestrone soup mix from Woolworths
1 tin chopped tomatoes
1 litre vegetable stock
1 heaped tsp tomato purée
1 tsp xylitol/sugar
2 bay leaves
Handful of fresh basil
1 heaped tsp cayenne pepper
Sea salt & black pepper
Olive oil
30g pasta rice/penne
Parmesan cheese, grated to serve
METHOD
Serves 4-5
Preparation 5 minutes
Cooking time 1 hour
Pour in 1-2 tablespoons of olive oil to a heavy-based pot, add the tomato purée, xylitol, soup mix and fry for 5 minutes. Then add 1 litre of vegetable stock, the tinned tomatoes, cayenne pepper, sea salt, black pepper and the bay leaves. Give it a good stir. Boil for 40 minutes with lid on.
Then add pasta rice and fresh basil and boil for a further 10 minutes or until soft. Season to taste, sprinkle with grated parmesan and serve.
I loved it, it was quick and easy. I used canned fire tomato instead just to add little smoky flavor (I loved it). Next time will surely add chicken breast (to add up some protein). This recipe is truly a keeper.
