
These beautiful breakfast parfaits are so delicious and really aren’t a hassle to make. You can use just about any fruit you have at home, I just happened to have frozen berries in my freezer. I’d highly recommend buying a bag they last in the freezer for months.
This is the perfect on-the-go breakfast and you can make them the night before.

INGREDIENTS
¾ cup Oats (gluten free if necessary)
1 ½ cups boiling water
½ tsp vanilla Extract
½ tsp cinnamon
¾ cup plain full-cream yogurt
1 tbsp honey
½ cup frozen berries
¼ cup healthy nut mix (Food Lovers)
2 CONSOL glass jars, for serving
METHOD
Serves 2
Preparation 5 minutes
Cooking time 10 minutes
In a small saucepan, combine the oats, water, vanilla and cinnamon. Let simmer on low-medium heat for about 7- 8 minutes, until the oats is cooked to your liking. Let them cool for a few minutes before layering it into the parfait.
Place another small saucepan on high heat and melt the berries and add the honey. Stir until a nice juice starts to form, I like it when there are a few intact berries left.
To build the parfaits, spoon the oats into the bottom of each glass, then layer on a spoonful of yogurt, then a spoonful of berries and repeat. Top with healthy nut mix and flowers and you’re ready to serve.
