You must be thinking, what on earth is this woman on about, a fruit jacuzzi? Here’s my explanation….The other night I had a small get together and I asked my amazingly talented friend Bianca to bring a healthy dessert, and the only healthy dessert that came to mind was a fruit salad and that was obviously at the bottom of our list. Bi, being an innovative and clever baker decided to make a base out of tennis biscuits and add fat free yogurt and delicious berries to the mix. It looked as though the berries were having a luxurious time chilling in the yogurt and that’s how the name came about. It was unbelievable, so I decided to share the recipe with all of you ❤
For the base:
1 packet of tennis biscuits, crushed
1/2 a cup of melted butter
Fat free Greek yogurt, 1/3 of a tub
Fresh berries (strawberries, blueberries, raspberries etc.)
1 loose-bottomed tin
Serves 4-5 people.
Preparation: 10 minutes
Cooking time: 15 minutes
Preheat the oven to 180C.
In a bowl add the crushed tennis biscuits and melted butter and mix until it combines, add more butter if it is still a bit dry. Rub some butter onto the tin and spread the mixture evenly making sure there are no holes. Bake in the oven for 10/15 minutes (check after 10), it should be golden brown.
Once the base has cooled, add the Greek yogurt until the base is just about full. Chop the strawberries (leave about three whole ones for presentation) and scatter a generous amount of berries onto the yogurt, squeeze just over a tablespoon of honey and you’re good to go.
Ps: Use a bread knife to cut the base into quarters, it is a bit messy, but completely worth it.
