My fishmonger (Fisherman’s Deli in Dunkeld Centre) offers smoked salmon off-cuts which are less than half the price of a normal portion of smoked salmon, which is great when you are cooking for one and feel like spoiling yourself.
INGREDIENTS
170 grams smoked salmon
1 large handful of little gem lettuces
2 tbsp fat-free cottage cheese
1 tsp caper berries
10 cherry tomatoes, halved
1/2 an avocado, sliced
Smoked paprika
1/2 lemon, quartered
For the dressing:
3 tbsp fat-free Bulgarian yogurt
2 tsp red wine vinegar
2 tsp lemon juice
2 tbsp extra virgin olive oil
Pinch of sea salt
Drizzle of honey (1/2 tsp)
METHOD
Serves 1 hungry human
Preparation: 5 minutes
Whisk together the dressing ingredients, tasting constantly for the right balance of flavours.
Place greens in large bowl. Toss with enough dressing to coat lightly.
Arrange smoked salmon slices over the greens. Then sprinkle with capers, tomatoes and avo.
Then drizzle the rest of the salad dressing over the top, to finish off- place the cottage cheese in the centre with a touch of paprika, and a generous squeeze of lemon juice and black pepper.
