Flatty Patatties

In the picture, I used Thyme and sage oil (search for my frozen herb oil in my tips section).

Are you tired of plain and boring baked potatoes? Well I have the solution, my extremely delicious flat potatoes. The great thing about these potatoes is that every single human being loves them, which is great when you have to cook for fussy people.


1 potato per person
5 sprigs of fresh rosemary
5 sprigs fresh thyme
5 cubes of frozen herb oil
Olive oil
1 garlic clove per potato
Sea salt
Freshly ground black pepper
Parmesan cheese, grated

Preparation: 7 minutes
Cooking time: 50-60 minutes

Par cook the potatoes in the microwave.

Once they are par cooked, place them on a roasting tray and push down with a potato masher. Then add a generous amount of olive oil, salt and pepper. Bake in the oven for 40 minutes.

Once they have been baking for 20 minutes, add the fresh herbs, garlic and parmesan. You might need to add some more olive oil, these bad boys tend to soak up a lot! Continue cooking for another 10-20 minutes or until perfectly roasted.

Eat alone or as any accompaniment.
