I have been reading a lot of life hacks about healthy food replacements and I thought I should try this one. My boyfriend hates cauliflower with a passion, so I decided to tell him we were having mash potato for dinner; only after he had wiped his plate clean I told him it was cauliflower. I was so chuffed with myself and he was so surprised. It really was a great moment for me. It is a great way to make your children eat vegetables.
INGREDIENTS
1 head of cauliflower, chopped up
1/4 cup milk
1 garlic clove, crushed
Nutmeg
Sea salt
Black pepper
Small knob of butter
50 g Parmesan cheese, grated
EQUIPMENT
1 small pot
1 liquidizer or handheld food blender
METHOD
Serves 5
Preparation 3 minutes
Cooking time 5 minutes
Place the chopped cauliflower into salted boiling water, once tender (a fork should easily pierce it) drain and put it back into the pot.
Add the milk, salt, pepper, grated nutmeg (1/2 tsp), garlic and butter and blend until smooth. Once blended, add the grated cheese and taste to adjust the flavour.
