This weekend I made roast fillet and I was dying for a delicious pepper sauce, but I forgot to buy some, luckily I had all the ingredients to make my own. After making my own, I will never buy store-bought pepper sauce again. It is so easy to make and tastes like a dream. Buy the best quality green peppercorns if you can.
INGREDIENTS
4 tablespoons green peppercorns
60 g butter
1 small red onion, finely chopped
100 ml brandy
100 ml beef/chicken stock
60 ml double cream
Sea salt, to taste
METHOD
Serves 4
Preparation: 3 minutes
Cooking time: 15 minutes
Slightly crush the peppercorns in a mortar and pestle or with a rolling-pin.
Melt the butter in a saucepan over a medium-heat. Add the chopped onions and saute for 3 minutes or until soft, make sure they don’t burn.
Add the brandy and boil for another 3 minutes, then add the stock and boil until reduced, 2-3 minutes.
Finally, add the cream and the peppercorns, simmer for 5-7 minutes until the sauce has thickened. Taste and adjust the flavour with salt, I didn’t add any but each to their own 😉
Serve with your favourite piece of meat.
