I can’t believe I haven’t posted this recipe yet! I think these burgers are what made me famous, well at least among my friends they did 😉 I’ve experimented with many different ingredients to find the best patty. I find the less chunky ingredients added is best, as they don’t bind properly. Don’t be afraid of using too much salt, it acts as the binder, especially because there are no breadcrumbs. You can add any toppings you like, bacon is always a winner!
INGREDIENTS
For the beef patty (200 g for each patty):
1.5 kg free-range lean beef mince
2 tbsp Dijon mustard
1 tbsp chopped parsley
1 tbsp coarse sea salt
1 tbsp black pepper
1/4 can of beer
2 tsp ground coriander
Olive oil
For the toppings:
8 X Sesame buns
Caramelized onions: use 5 brown onions – (refer to my recipe, search for it under the vegetarian category)
Ice-burg lettuce
3 tomatoes, sliced
1 avocado, sliced
Mozzarella cheese, sliced
Burger mayo (from Woolworths)
Tomato sauce
2 red chilies, chopped
For the BBQ sauce:
2 tbsp tomato sauce
2 tbsp Worcestershire sauce
1 tsp soy sauce
1 squeeze of honey
1/2 tsp ground coriander
1/2 tsp paprika
Kosher Salt and black pepper
For the sweet potato chips:
6-7 sweet potatoes
Olive oil
Kosher salt
Black pepper
3 garlic cloves, crushed
1 tsp Chili flakes
1 tsp dried rosemary
1 tsp black mustard seeds
EQUIPMENT
1 large bowl
1 scale
1 basting brush
1 large oven tray
Mortar and Pestle
Gas braai or barbecue
METHOD
Serves 6-8 people
Preparation: 30 minutes
Cooking time: 30 minutes
Preheat the oven to 200C.
Poke holes into the potatoes and par-cook them in the microwave until slightly soft. On a chopping board slice the chips vertically and lay them on a large oven tray. Coat with olive oil. In a mortar and pestle bash the chili flakes, dried rosemary, mustard seeds, salt and pepper. Then evenly coat the chips and cook for 30 minutes.
In a large bowl combine all the patty ingredients and thoroughly mix with your hands. Each patty will be 200 grams so use the scale to measure, I usually use a small bowl to make the patty shape, the flatter the better! Place them on a tray that can fit in your fridge. Once made, place in the fridge for at least 30 minutes.
Combine all the BBQ sauce ingredients in a bowl and add a touch of boiling water to combine.
Once the chips have been in the oven for 30 minutes, add the crushed garlic , toss them around and cook for a further 10 minutes, or until crispy.
While the patties are setting, prepare all the burger toppings including the caramelized onions. Place on a tray and take to the table.
Once the patties have set take them out of the fridge and cover with olive oil. Turn the braai on and wait until it reaches 200C.
Cook the patties for 7-8 minutes on each side- for medium. Once the patties have been flipped, using a basting brush cover the cooked side with BBQ sauce. Repeat when the other side is cooked, flip them over again so the sauce can caramelize.
If people want cheese burgers, add a slice of cheese on top of the patties at the end of the cooking time and close the lid until the cheese starts to melt.
Once cooked, rest the patties for 5 minutes.
