The health benefits of broccoli are extensive. Not only are they loaded with essential nutrients, they also have therapeutic properties. Some of the benefits include protecting your skin against the effects of UV light; eating it prevents osteoarthritis and reduces the risk of cancer. Eating broccoli at least three times a month is imperative. But, they trick it to not overcook it!! Blanching or steaming broccoli is the healthiest option.
However, sometimes you get over eating broccoli plain; this recipe is the best especially if you love garlic, parsley and lemon.
INGREDIENTS
1 head of broccoli, washed and broken up
1 large handful of parsley, chopped
The juice of half a lemon
3 tbsp extra virgin olive oil
3 garlic cloves, crushed
Kosher salt
Black pepper
METHOD
Preparation: 5 minutes
Cooking time 3-5 minutes
Wash and cut the broccoli, try to make all of the florets the same size to ensure they will all cook at the same rate.
Place a medium-sized pot on high-heat with boiling water and prepare your ice water bath.
Once the water starts boiling, cook the broccoli for 3 minutes, it should still be green and a bit firm. Then, using a slotted spoon place the florets into the iced water to stop the cooking process.
Remove them after 30 seconds and strain them using a colander.
In a glass bowl add the chopped parsley, crushed garlic, extra virgin olive oil, lemon juice, salt and pepper. The broccoli might turn a bit yellow, this is from the lemon juice (so don’t freak out). Mix with the broccoli and serve immediately.

Agreed! Also can’t stand overcooked broccoli.
