Here is THE best recipes for good ol fashioned roast potatoes. These are the bomb, the ultimate partner to a delicious Christmas roast.
INGREDIENTS
1.5 kg Maris Piper potatoes, peeled and quartered
sea salt
freshly ground black pepper
olive oil
1 bulb garlic, broken into cloves
Apple cider vinegar
1 tbsp butter, cut into cubes
5 sprigs fresh rosemary
5 sprigs fresh thyme
METHOD
Serves 6
Preparation 25 minutes
Cooking time 1 hour
Preheat the oven to 200ºC. Boil the kettle.
Place a large pot on high heat and add the quartered potatoes a large pinch of salt and bring to the boil. Boil for 15 minutes.
Once the potatoes are tender, drain, then place them back into the pot add a generous lug of olive oil, the butter, a large pinch of sea salt, freshly ground black pepper and a tablespoon of vinegar. Give them a bit of a shake to help chuff up the potatoes – this will help to make them super crisp later on.
Transfer to a large roasting tray and roast for 30 minutes. Then take out of the oven, toss them a little and add the garlic, make sure you smash the garlic with a blunt object so you can release all the beautiful flavours. Also add the fresh herbs and roast for a further 35 minutes, or until crispy and light.
