Goodness me my love for crispy wings knows no bounds. My favourite part is the crispy “wing bit”. I can literally eat wings all day, smother them in hot Asian chilli sauce and I’m a goner 😉 These wings are sweet, spicy, AND crunchy. I paired them with crunchy slaw, crispy rice and lime. If you prep everything in advance this meal takes no more than an hour.
INGREDIENTS
For the wings:
500g free-range chicken wings and legs
1.5 tbsp vegetable oil
salt & pepper
For the sauce:
1/3 cup Sriracha/ Huy Fong Sambal Oelek Ground Chili Paste (both found at Woolworths)
3 tbsp soy sauce
3 tbsp runny honey
1 tbsp rice wine vinegar
1 big thumb of ginger, grated
2 tsp sesame oil
Juice and zest of 1 lime
2 cloves garlic, grated
½ cup butter, melted
2 spring onions, chopped
2 tbsp crushed peanuts
2 tsp sesame seeds
For the Asian Slaw:
½ a head of red cabbage, shredded
1 large carrot, grated
1 packet mixed sprouts
2 spring onions, chopped
2-3 tbsp full cream Greek yogurt
1 heaped tsp wasabi
Juice and zest of 1 lime
½ tsp xylitol/sugar
2-3 limes, quartered
1 cup basmati
METHOD
Serves 4
Preparation 10 minutes
Cooking time 50 minutes
Preheat your oven to 240°C with grill and fan on.
Pat dry the wings with paper towel. Toss the wings with the vegetable oil, and season with salt & pepper.
Bake on a tray lined with parchment paper for 40-45 minutes, until cooked through and nice and crispy.
Boil the kettle. Run the rice under water until the water runs clear, place a small pot on high heat, add the rice and 1.5 cups of boiling water. Place the lid on, turn down to a simmer and cook for 15 minutes. Once cooked, turn the heat off and steam for 15 minutes, without lifting the lid.
While your wings are baking, make your sauce.
Combine you chilli paste, soy, honey, vinegar, ginger, garlic, sesame oil, and lime in a medium bowl. Add your melted butter, and whisk well. Set aside.
Place all the slaw ingredients into a bowl, in another bowl mix together the yogurt, lime zest and juice, wasabi, xylitol, and a pinch of sea salt. Pour over the slaw and mix well.
When your wings are done, toss them with your sauce, and sprinkle over the sesame seeds, green onions, and peanuts. Toss once more.
