Crispy Ostrich Mince With Sesame Veggies

Ever since my brother started chemotherapy, we’ve had to steer clear of red meat. Luckily, ostrich is considered a white meat, weird I know, but I’m not going to argue 😉 If you can’t find ostrich mince, beef mince will work equally as well. The biggest tip for making the mince crispy is cooking it in batches. It does take a little bit longer, but it’s necessary.


INGREDIENTS

 

1kg ostrich mince
4 tbsp coconut oil
1 bunch of spring onions, chopped
5 gloves of garlic, crushed
5cm thumb of ginger, grated
2-3 red chilies, chopped
1 tbsp low sodium soy sauce

1 punnet veg & marrow spaghetti stir-fry (Woolworths)
1 punnet crisp & crunchy stir-fry mix (Woolworths)
1 cup wild brown rice
1 punnet radishes, julienned

For the sauce:

2 garlic cloves, crushed
2cm thumb of ginger, grated
1 red chili, chopped
3 tbsp low sodium soy sauce
1 tbsp sesame oil
1 tsp rice wine vinegar
1 heaped tbsp maple syrup
1.5 cups organic chicken stock
2 tbsp corn starch
The zest and juice of 1 lime
2 tbsp sesame seeds


METHOD
Serves 4 people
Preparation 15 minutes
Cooking time 30 minutes


Boil the kettle and get the rice on the stove (follow packet instructions).

In a food processor chop the ginger, garlic and chili, set aside this will be used for the sauce and the mince. Place a small pot over high heat, add the sesame oil and a little less than half of the chopped aromatics to the pan. Cook for 2 minutes, then add the remainder of the sauce ingredients. Let simmer until everything has finished cooking.

Place a small frying pan on high heat and toast the sesame seeds until golden – keep a close eye on them!

Place a wok over high heat and add 1 tbsp of coconut oil. Wait, until it is hot then add the first batch of mince. Break down the mince with your spoon. Then add a touch of the aromatics and a tbsp of the spring onions. Fry for 5 minutes, tossing every 30 seconds, this will ensure the meat gets crispy. Repeat, until all the mince is cooked. Remove from the wok then add the veggies and the sauce. Cook for 3 minutes, then add the mince and the toasted sesame seeds.
