Like most people I have a weakness for crispy chips, this recipe is so easy you could make these chips in your sleep. You can do half sweet potatoes and half normal potatoes. And the best thing is that a deep fryer is not needed!
10 potatoes, washed
1 tsp mustard seeds
1 tsp dried rosemary
1 tsp dried garlic flakes
1 tsp dried chilli flakes
1/2 tsp sea salt
1/2 tsp fresh black pepper
2 garlic cloves, crushed
Serves 5-7 people
Preparation: 10 minutes
Cooking time: 20-30 minutes
Preheat the oven to 220C.
Wash and poke holes into the potatoes, then place them in a microwave friendly bowl and par cook them (this saves so much time). My microwave has a par-cooking potato option which is amazing- most do!
While the potatoes are par cooking, mix all the spice ingredients together. Once the potatoes are par cooked, cut them into thin chip shaped pieces.
On a large baking tray pour some of the olive oil and half of the mixed spices, and then spread the chips evenly on the tray (use more than one if you need to, ensure the chips aren’t piled on top of each other ). Then sprinkle the rest of the spices and another lug of olive oil.
Bake in the oven for 20 minutes, then add the crushed garlic and give them a shake. Bake for another 5-10 minutes or until cooked to your liking.
Serve with just about anything or eat them alone, I know I do 🙂 Serve immediately!
