This is the perfect substitution for rice, especially for people, like me, who are trying not to eat carbs at night. Just like any rice dishes you can add anything to the mix. This dish requires no water.
INGREDIENTS
1 cauliflower, soaked in salted water
1 onion
1 clove of garlic
80 g butter
Salt & pepper
METHOD
In a food processor with the blade attachment chop up the cauliflower into a couscous like consistency.
Place a pan on high-heat and saute the onions with the butter and garlic. Once the onions are soft add the cauli-rice, cover and cook for 5-7 minutes or until a bit soft. Try not over cook as it will turn soggy.
One of my favourite things to eat!! Even John likes it and he hates cauliflower.
