This salad dressing is awesome, it goes with everything and it takes a few seconds to make. In this recipe I served the dressing with a rocket, pepper, onion and feta salad.
The juice of 2 lemons (about 50 ml)
1 tbsp Dijon mustard
150 ml extra-virgin olive oil
1/2 cup full-cream yogurt
Salt and Pepper
1 tsp Xylitol/sugar
Combine the lemon juice, sugar, yogurt and mustard in a mixing bowl.
While whisking continuously, pour in the olive oil until a dressing is formed. Season to taste, with salt and pepper.
