Green Almond Salad

This is the most delicious salad, almonds in any form are heavenly, especially when they are roasted whole! It is so healthy and goes beautifully with any meal. You can add crispy bacon if desired. The salad dressing to die for, it is so deliciously creamy.


INGREDIENTS
The Real Meal Revolution

1 packet of tenderstem broccoli (400 g), broken up into florets
2 avocados, cut into chunks
1 bunch of spring onions, chopped
1 packet rocket

For the dressing:

1/2 cup whole almonds, skin on
1 tbsp lemon juice
1 tbsp whole grain mustard
4 tbsp Crème fraîche
100 ml milk
Pinch of sea salt


METHOD
Serves 6-7
Preparation: 10 minutes


To make the dressing:

Turn the oven onto grill. Roast the nuts until golden brown, keep a close eye on them! Once roasted chop them roughly. Leave them to cool, the nuts have to be cool as they will cause the rocket to wilt.

Add the remaining ingredients, with half the nuts into a tall and narrow container, and blend using a stick blender.

For the salad:

In a small pot of boiling water, blanch the broccoli until al dente (1 minute) and refresh in ice-cold water.

Combine the broccoli, spring onions, avo and rocket into a bowl, mix and then spread over a platter.

Pour over the dressing and sprinkle the other half of the nuts.
