If you’re looking to add an amazing crunchy element to your salad, pasta or just about anything, my savoury praline is the way to go. The combination of nuts, rosemary, garlic, salt, and honey is heavenly. You can use any nuts you have lying around.
INGREDIENTS
10 almonds
10 macadamia nuts
1 tsp pine nuts
1 garlic clove, crushed
1 sprig fresh rosemary
1 tbsp olive oil
1 tbsp runny honey
Sea salt to taste
METHOD
In a mortar and pestle bash up the nuts until roughly bashed, make sure you have some whole nuts left over.
Place a small frying pan on medium heat, add the olive oil and nuts and brown for about 1 minute, tossing regularly. Add the garlic and fry for a further minute.
Run boiling water over the rosemary then remove the leaves from the stalk, chuck in the pan along with the honey. Once the honey starts bubbling, give the mixture a quick stir season with salt, turn the heat off and let the honey harden for about 10 minutes. Break it up with a spoon and sprinkle over just about anything.
